Healthy Hemp Anzac Biscuits

There is something to be said for a golden brown anzac bikkie, especially on a day that is steeped in history.

Today marks a unique and also sad day in our modern history where our country is unable to honour our service men and women the way we normally would. Packed out dawn services, commemorative events and marches all cancelled because of the covid19 isolation restrictions. But we will remember them. Lest we forget.

As usual I have healthified this recipe by swapping out the refined wheat based flours, sugar and golden syrup with more whole foods ingredients. The almond meal, coconut oil and hemp seeds all provide a healthy boost of essential fatty acids in synergy with the numerous other important vitamins and nutrients they contain.

I’ve kept this as low in gluten as possible by opting for certified organic wheat free oats (my go-to is always Bob Mills). Be wary of “gluten free” flours which are still highly refined and usually made with fillers and starches which do not do any favours for your gut or blood sugar levels.

For a fully plant based version simply swap out the honey for maple or coconut nectar.

Ingredients

Dry

1 cup shredded coconut
1 cup almond meal
1 cup wheat free organic rolled oats
2 Tbs hemp seeds (or hemp protein powder)
1/3 cup rapadura or coconut sugar
1 tsp arrowroot
1/4 tsp baking soda

Optional:

1/4 cup sunflower seeds
1/4 cup almond flakes

Wet

4 Tbs coconut oil
2 Tbs maple or honey
1 tsp vanilla essence
5 Tbs hot water

Method

  1. Preheat oven to 175C.

  2. Combine dry ingredients together in a large bowl.

  3. Add wet ingredients to the dry ingredients and mix well.

  4. Roll into balls and place on a lined tray (I like to wet my hands a little so the mix doesn’t stick too much).

  5. Bake for 20mins or until golden. They should be soft to touch and will harden on cooling.

  6. Be sure to let them cool right down so they become hard around the outside and chewy!

  7. Enjoy with your favourite herbal cuppa ;)

Pro Tip - When using almond meal, they can be a bit more crumbly so it’s good to use arrowroot or tapioca starch to help bind.

Also, if you happen to enjoy making your own almond milk (or any nut milk!), make sure you save the pulp for your baking. This is a great way to use up whatever you have instead of discarding. #wastenot
